INGREDIENTS:
- 5 lbs Beef Cheeks
- 2 cans of Crush City IPA (or your favorite beer)
- 1 White Onion
- 8 garlic cloves
- 2-3 Jalapenos
- 1/4 cup fresh Oregano
- 1 bunch of Cilantro
- 2 Tsp of ground Cumin
- 4 Tsp Salt
- 2 Tsp Pepper
- 1/4 cup of cooking oil
- Gather all ingredients except the beef and cooking oil and blend in food processor or blender. This will be your braising liquid for the cheeks.
- Place FIREDISC® on med-high heat, add oil to disc, sear off the meal and make sure it is nice and brown on all sides.
- Lower the heat down to med low and add the braising liquid to the FIREDISC® with the beef cheeks.
- Cover and cook low and slow for about 3 to 4 hours or until the meat is fork tender.
- This can be kept in the FIREDISC® in the center while you cook totillas on the edges of the disc. Serve with diced onions, cilatro and your favorite salsa.
