INGREDIENTS:
- 1 lb of your favorite white fish, skin removed
- 2 tsp of olive oil
- ½ onion, chopped
- 2 clove of garlic, chopped
- 1 tbs of white wine
- ½ tomato, diced
- ½ cup of chickpeas
- ½ cup of black olives
- Salt and pepper to taste
- 2 c flour
- Season the fish with salt and pepper and then bread it with the flour.
- Set the FireDisc to medium heat and add the olive oil.
- Cook the fish for 3 minutes per side and set it aside.
- Sautee the onion, garlic, and tomato and cook for another 5 minutes.
- Add the white wine and let the liquid reduce to half of the original volume.
- Place the fish back in the FireDisc, add the black olives and the chickpeas.
- Serve over white rice or quinoa, enjoy!
