INGREDIENTS:
- 1 1/4 c self rising cornmeal
- 1/2 c of flour
- 1/4 c white onion, chopped
- 2 jalapeños, diced
- 1 egg, lightly beaten
- 8 oz creamed corn
- 1 qt frying oil
- Set your FIREDISC® to high heat and with a frying thermometer heat the oil to 350 F
- Mix all ingredients minus the oil in a large mixing bowl and allow to rest for a few minutes.
- Using a teaspoon, drop batter into the oil and cook until browned, about 3 minutes.
- Remove hush puppies with a slotted spoon and place on a paper towel lined plate.
- Sprinkle with salt and enjoy!
