FISHERMAN’S STEW

SERVES 5 Whether you are out by the sea or just in your backyard, this hearty stew made with white fish and vegetables pack just the right heat to warm you up all over.
INGREDIENTS:
  • 2 lbs Cod, cut into 1 inch cubes and seasoned with salt
  • 1 yellow onion
  • 5 cloves garlic, minced
  • 1 fennel head, diced
  • 2 large tomatoes, diced
  • 2 c white wine
  • 1/2 lb gold potatoes, diced
  • 1/2 lemon, juiced
  • 4 tbsp. diced basil
  • 1 c mayo
  • 2 c HABE Sauce
PREPARATION:
  • Set the FIREDISC® to medium heat, add some vegetable oil to the pan and sauté the garlic and onion for 5 minutes.
  • Add the fennel and cook for 3 minutes.
  • Add the tomatoes, a touch of salt, and cook for 10 minutes.
  • dd the wine, 4 c of water, and once the liquid is at a boil add the potatoes and cook for 10 minutes.
  • Add the lemon juice and taste for seasoning
  • Add the fish and cook for 8 minutes.
  • Mix the basil, mayo, and the HABE sauce together in a mixing bowl.
  • Add to the stew and mix well.
  • Allow the stew to cool and enjoy!
