INGREDIENTS:
- 2 lbs Cod, cut into 1 inch cubes and seasoned with salt
- 1 yellow onion
- 5 cloves garlic, minced
- 1 fennel head, diced
- 2 large tomatoes, diced
- 2 c white wine
- 1/2 lb gold potatoes, diced
- 1/2 lemon, juiced
- 4 tbsp. diced basil
- 1 c mayo
- 2 c HABE Sauce
- Set the FIREDISC® to medium heat, add some vegetable oil to the pan and sauté the garlic and onion for 5 minutes.
- Add the fennel and cook for 3 minutes.
- Add the tomatoes, a touch of salt, and cook for 10 minutes.
- dd the wine, 4 c of water, and once the liquid is at a boil add the potatoes and cook for 10 minutes.
- Add the lemon juice and taste for seasoning
- Add the fish and cook for 8 minutes.
- Mix the basil, mayo, and the HABE sauce together in a mixing bowl.
- Add to the stew and mix well.
- Allow the stew to cool and enjoy!
