INGREDIENTS:
- 1 lb tilapia fillets
- 4 eggs, beaten with 1 tbsp. of water
- 2 c panko bread crumbs
- Flour Mixture (combine and mix)
- 1 c flour
- 2 tbsp. salt
- 2 tbsp. garlic powder
- 1 tbsp. white pepper
- Corn Salsa (combine and mix)
- 1 14oz can corn
- 1/2 c red onion, diced
- 1 red bell pepper, diced
- 1 lime, juiced
- 1 1/2 quarts fry oil
- Touch of salt
- Dredge the tilapia in the flour mixture, dunk in egg wash, then bread with panko
- Set fish aside
- Mix corn salsa together in a medium size bowl.
- Set FIREDISC®c to HIGH with fry oil, allow oil to reach 375 degrees F and fry fish in batches of 4 or 5 for 5 minutes.
- Drain fish on a paper lined plate and top with a touch of salt
- Allow fish to cool, top with salsa mixture, serve, and enjoy!
